One hectic week

So this week was crazy to say the least. As I predicted the guy that was running our class had no idea what he was doing. In restaurant if you are the sous chef then you have a whole check list to do and this guy did none of them. The first day of class we were starting the beginning of service and he hadn't put any plates in the oven to warm them. He also would disappear all the time right when you needed to ask him a question. If you suggested anything at all than he would say no that's not how we're going to do it. He was also our expo which is the person who looks ata ll the dishes before they are sent out to customers to make sure they look alright and are clean. He also fires the different courses and keeps everyone on track. He did NOT do this. The people on the line had to continually tell him what he needed to do and let the servers know when everything was done. Then the thing that pissed me off the most was that he never helped clean the kitchen at the end of the day. He did have the balls to yell at someone else though when they were waiting to take out the garbage. Oh he also ran right into someone who had a bunch of dishes in her hands and didn't say anything to acknowledge her. Wednesday was probably the worst day because of the servers actually. Oh and before i even get to that some of the students from the senior practicum class were in the front of the house too and apparently don't know how to use the correct in and out doors, plus when you are taking out the entrees they are supposed to be carried on trays but this girl kept carrying them by hand i was so pissed off. Anyways back to Wednesday. On Wednesday we were supposed to have 39 covers I think we ended up having 37 covers. We even had to turn a table and for those of of you who don't know what that means it means that there was a table that came in that we had to make sure that they got all of their food in time for us to clean it all up and set it again for another party to come in. We also had a table of 5 and 10 come in. When the dining room opened there were 3 tables that were seated right out of the gate but we weren't getting any tickets in. Finally 20 minutes into service we got all 3 tickets and the servers wouldn't stop yelling about where their appetizers and things were. They kept doing it all day and it really pissed us off. We made it through the week though.

Restaurant for week 11

So for week 11 our class gets to come up with the menu for the week. My friend and I are on appetizers and today we figured out what we're going to make, tell me what you think. We have three of them: Pineapple, jicama, redonion, and grapefruit salad, Spinach rolls, and Potato and leek soup. The spinach rolls I've actually made at home before they are really good. The inside mixture is spinach, green onion, leeks and spices I then roll them up into layered phyllo dough and then they are baked in the oven. The salad has grilled pineapple on the bottom with greens and garnish on top. I forget what the dressing is on it so i'll have to go back and check.

This week in class

This week in my restaurant class the seniors created the menu and will be running the class ( it is part of a different class that they have to do this). I'm kind of mad becauae they totally stole my idea about an Irish menu but what are you going to do. I also i have to work with a person who I really don't like but what are you going to do right? Oh well I'll just have to suck it up and get through it. I will be working on the appetizers and the rescipes are but up but the only recipes i see for appetizers is a goat cheese salad so we'll see what happens. I'll keep you all filled in and post some pictures of what everything looks like.

MY name is Kelsey and I am currently studying at the culinary institute of Las Vegas. I have always enjoyed eating food and i have always enjoyed making food. I also love planning parties and get togethers. I'm from Rochester, NY and eventually plan on owning a restaurant in Saratoga Springs, NY named the Royal Peacock. I thought I would create this blog to share with you some of my work in school and outside of school. If anyone wants or needs help with anything food related weather it's a recipe or ideas to serve at a party or even what kind of drinks to pair with any kind of food let me know and i will try to help.
